Using a pen instead of your finger on a touch screen would eliminate
fine pixel issues.

Using a touch screen attached to a laptop I think would be no problem
assuming you could rest your elbow on the table. I'm sitting right now
with my laptop on my lap and touching the screen would be no problem.

My question is, do you think computer interfacing would be drastically
improved through a touch screen? I just feel like it would be way
faster and a much more "hands on experience". In a way, give your
computer that feeling you get from working with hardware synthesizers
that everybody loves.

Dragging and dropping would be very very fast for instance, making
working with modular programs very quick.
