For audio applications, look at the Journal of the Audio Engineering Society.
There is also a signal processing part in the Journal of the Acoustical Society
of America. IEEE produces a lot of Transactions publications on DSP, audio,
acoustics, speech. I even think that there is a journal titled like "Digital
Signal Processing" or "Signal Processing", I am not sure.

The most well-known and appreciated are surely the first two (at least in my
domain). A revision in the Journal of Acoustical Society of America can take an
entire year.
