we do, actually, but because middle C is only one note from amongst
many which are used (and referred to), there needs to be some
reference system to communicate these pitches which is somewhat more
sophisticated and less weighty than:

F#, four and a half octaves below middle C
C, 3 octaves below middle C
B, just less than an octave below middle C
B, just less than an octave above middle C
Eb, 4 octaves and a bit above middle C
