Hi Ian,
I know that Adrian Moore (based and Sheffield University) has been doing work with some bespoke software which records each step a composer makes as they develop a piece. All the editing, arranging, and sound design has to work within the software as I understand it, but I'm sure he will be able to eloborate further!

I am aware of the work of Barry Truax and his DVD documentation of River Run, the Shaman Ascending, Pendlerdrøm, Island, and Temple.
